Kiwi Pie

The facts were these

First off, a happy St Davids Day to my fellow Welsh folk! It’d be a stretch to say this pie is remotely related to celebration so I’m not even going to try. I took a break from pies last week as I was starting to feel more pastry than person. This pie is refreshing both in flavour and style, its a biscuit base and a fresh filling so completely different to what we’ve had before. Now confession time, the pie isn’t actually mentioned in the dialogue of S1:E4 but I did spot it on the pie hole specials board in the back of a scene. So essentially I’ve gone rogue, and you should note that my definition for pie is flexible because otherwise it would make for a pretty boring series. This kiwi pie was a winner with all the taste testers, it resembles a key lime pie with a spicy ginger crust and zingy lime filling. It’s also super quick and very cheap to rustle up so excellent to have in the repertoire as a last minute dessert.

S1:E4 ‘Pigeon’

Kiwi Pie

Serves 8-10                 Takes 30mins plus chilling

Ingredients

For the crust:

200g Ginger nut biscuits

75g Butter (melted)

For the filling:

200ml Double cream

200g Condensed milk

4 Limes (zest and juice)

Approx 5 Mint Leaves (shredded)

6 Kiwis

Method

  1. Preheat the oven to 180/160 fan/Gas mark 4
  2. Crush the biscuits until they’re fine crumbs. You can do this using a food processor or a good old-fashioned rolling pin.
  3. Add the butter to the biscuits and press into a tart tin/pie dish until compact.
  4. Bake in the oven for 10 mins then leave to cool.
  5. In a bowl, whisk together the cream, condensed milk, lime juice and zest.
  6. Add in the shredded mint leaves.
  7. Once the base is cooled, dollop the creamy mixture onto the biscuits and spread out evenly.
  8. Peel and slice the kiwis and arrange on top of the pie.
  9. Pop in the fridge for at least an hour to chill and set before serving.

And there you have it. A super simple and quick addition to the pies of pushing daisies series!
